One of those weeks...

It's only Tuesday and it has already been the kind of week that I don't want to get out of bed or do anything productive. So today I tried to snap myself out of the funk I am in and indulged in a little baking with some Christmas music. I know I know its wayy to early for Christmas music, but seriously there is nothing better to baking while listening to Christmas music (huge mood booster!). We went apple picking over a week ago and I made an apple crisp but we still have SO many apples...Aaron is not a fan of apple pie, and it's not my favorite either so I ferociously searched different cooking blogs and with no surprise I was back at my favorite one Smitten Kitchen! I always find the most delicious recipes there. There was an apple cake that looked delicious and the ingredients were common so I did not have to leave to go get anything, great news since I didn't want to spend money. It called for a certain type of pan that I do not own (not even sure I know what it is!) So I improvised and used a 9 x 13 pan and since the only ingredient I did not have was orange juice I used milk...its baking as we speak and making our apartment smell amazing! So hopefully it will taste as good as it smells!

you can't tell from the picture but there is a layer of batter then apples and then more batter with apples on top, mmmm! 

Aaron is not a huge apple fan, but hopefully we can have some of the cake for dessert tonight, I am working on converting him to an apple and fall lover like myself. 

Anyone have any delicious apple baking or cooking recipes??! We still have a good 20 apples left and I have no idea what to do with them, they are decorating our counter nicely for the time being!

  1. First thing that came to mind, Apple Cider! I'm not sure how much work goes into it but the outcome would be totally worth it. Apple Cider and Donuts! Yum!
