I tend to buy bananas every single time I go to the store. Maybe it's because they are always cheap? Or perhaps because when you walk into Shaw's they are right there, screaming "buy me, pick me, choose me!" I really am not sure, but what I do know is we never eat them fast enough, so after a few days passes I throw them in the freezer in hopes to make banana bread a little later. A little later always turns into weeks later...and in this case the only reason I caved and took some time to make muffins today was because our freezer was overflowing with bananas. Lesson learned? Probably not, I will probably buy more bananas and not eat them. I searched all over for a yummy blueberry-banana muffin recipe and came across this one. I put on my apron and when to town. There is not butter, no white sugar, and no oil. I was actually re-reading the recipe ferociously as I mixed seeing if I missed anything...nope I added everything and my batter looked more like pizza dough. I just went with it...it was either see what happens or toss out the batter so why not just see what happens...well these beauties happened...




I just tried one...they are a little more chewy then I like and certainly are not sweet like I am used too, but overall they are not bad. I am happy I added 1 1/2 cups of blueberries because it helps add more taste since they are not sweet at all. They are made with wheat flour too, so they are very healthy! If you are looking for a healthy somewhat chewy alternative I suggest this recipe, but if you like the sweetness of banana bread then I would steer clear.
