Avocado Mac & Cheese

Last night I made avocado mac & cheese for dinner, I was a little iffy about how it was going to taste, but how could two of my favorite foods not taste good together? It was DELICIOUS.
The recipe I mostly followed is from here, and it is super easy guys. Takes 30 minutes max to make.

10 oz macaroni
2 avocados
2 cloves of garlic
2 Tbs butter
1 C. milk
salt & pepper to taste
2 Tbs flour
2 Tbs fresh lime juice
2 C. pepper jack cheese

Boil water in a medium sauce pan and cook macaroni for 8-10 minutes (al dante)

While the macaroni is cooking, shred 2 cups of pepper jack cheese, set aside. In a blender or food processor scoop out the avocados into the blender, mice two cloves of garlic and add the lime juice. Blend until smooth.
Mine did not come out completely smooth using a blender, I took a fork after and mashed it up a little more. 

Next in a medium sauce pan melt the butter, add the flour and whisk until it become a smooth paste. Add the 1 cup of milk and whisk until it thickens (add a little bit more flour if needed, it should take just a few minutes to thicken a little). Next add the cheese and melt into a creamy texture.

Drain the noodles, add the avocado mixture, stir it, then add the cheese mixture and stir it.

Feel free to add some extra avocado chunks to the top! Enjoy!
